Two young chefs will create a dinner that combines their classical French cuisine training with their Chinese roots at a fusion food event in Richmond.
Dining by the Awards 2023, an annual event hosted by Chinese Restaurant Awards shines the spotlight on emerging chefs, and this year the venue will be the Beijing Mansion at Westminster Highway and No. 5 Road.
The event features 27-year-old William Li, chef de cuisine of L’Abattoir, a Michelin-recommended French cuisine restaurant, and 24-year-old Toby Chen, executive sous chef at Missing Chopsticks, a modern Chinese-French fusion restaurant.
“Since the inception of DINING by the Awards in 2019, we’ve had the privilege of collaborating with nearly 20 culinary talents,” said Lee Man, chair of judges for the Chinese Restaurant Awards.
“For the 2023 series, our vision is to boldly provide a platform for the new generation, spotlighting the rising stars who have been wanting to unleash their talents in Chinese cuisine. We’re committed to nurturing the future of culinary talents and ‘Next Idea’ on Chinese cuisine.”
Both Li and Chen have combined their French culinary experience with an appreciation for their Chinese heritage, and will present a high-end Chinese and French fusion eight-course menu to attendees on Nov. 22 at Beijing Mansion.
